French Onion and Cabbage Soup Recipe

I've been on a cabbage kick lately... This was my first crazy idea I went off with....

French Onion and Cabbage Soup

Ingredients:

1/4 cup butter
5 onions {about 2 pounds}
1 Tbs sugar {i used brown, you can use white}
3 cloves garlic-chopped/minced
1 head of cabbage {chopped}
1 can beef broth
4 cups water
2 tsp beef bouillon
1 Tbs worcestershire sauce

In your large stock pot, melt the butter

add the onions and garlic

and the brown sugar

allow to cook....until brown

not yet.....

yes! nice and crusty!
{ok, don't burn them}

add beef stock

and the cabbage

add the bouillon and worcestershire, mix it up.
allow it to saute a bit
add your water and cover, simmer on medium/high

prepare your bread to go with/on top of it.
I used a baguette and put some swiss and mozzarella {i've seen lots of recipes that used guyere?}
allow that to bake in oven 400 degrees, until cheese is melted and crusts are melty.....

looks like it's done!

the bread is done too!

you can top off your soup and use the bread as your croutons....

or you can add a bit more cheese and stick the whole bowl back in the oven and allow it to cook into the soup. {broiling it works best here...just keep an eye on it so it doesn't burn} {and make sure your bowl/pot can go into the oven!}

enjoy the yummy goooey goodness!!

Verdict: Better than what I had earlier that day at G's dairy....what originally inspired me to make this soup
The child LOVED it. She loved dipping her bread into it {we left hers without a bread topping}
The hubby: best soup I've made so far: tasted like an au jus sauce type of thing.  He wanted to make sandwiches out of it!....so you can do that too!!
